Try this recipe for deputy editor Emma’s simple but tasty dish using home-grown broccoli fresh from the plot
This is a delicious one pot broccoli pasta dish using three different types of broccoli. One is the very seasonal purple sprouting broccoli, the fast growing calabrese and the even faster growing broccoli raab or Cima di rapa. The latter has yellow flowers but you pick it when in bud. It matures in approximately 100 days unlike purple sprouting which can take a year to grow. However three different broccoli is rather indulgent and one will suffice for this recipe.
Ingredients
1lb Penne pasta
2-3 cloves garlic
Salt and pepper
1 tablespoon olive oil
4-6 cups of water
1 head of calabrese or several sprigs of purple sprouting broccoli or broccoli raab
1 ounce of butter
Handful of pine nuts
4-5 tablespoons of cream
A handful of grated strong cheddar cheese
Parmesan grated –some in the pasta, some to sprinkle on top
What to do:
1 Chop the broccoli into small pieces
2 Put the crushed garlic, dry pasta, sprinkle of salt and pepper, olive oil and water in a pan
3 Boil for 8-10 minutes stirring occasionally
4 Add broccoli and butter and pine nuts an cook on a medium heat for a further two to three minutes
5 Lower the heat and add the cream and cheese. Stir until melted and blended. Serve
