We’ve been thinking about the vegetables that are currently in season, those we have a lot of and how we could use them all up. So we thought we’d share a couple of ideas, we found online, for you to try out too.
This time we’re focusing on versatile carrots and there’s a lot you can do with them, other than a simple side dish on a Sunday roast or Christmas dinner…
Summer’s out, salads aren’t
Salads aren’t just for summer and this warming winter salad will make use of lots of ingredients you may have on the plot. It looks delicious and nutritious.
It’s soup season
Soup is a must-have in winter and if it’s home-made, with a load of veg from the plot, then even better! Are you inundated with carrots and wanting to put them to good use? Why not try this carrot, cumin and coriander soup?
Here’s another soup we like the look of, this time using lentils too…
A little different combo
We’re not keeping it simple with a basic carrot cake here, instead we’ve found this delicious looking chai carrot loaf cake, with goats cheese frosting. Fancying a different sweet treat this year? Please let us know your thoughts if you decide to give it a go!
Festive tip: If you’ve got kids, don’t get too excited, remember you’ll need a couple of carrots to leave out for Santa’s reindeer!
