A delicious salad bowl of Greek inspired delights – fresh feta, hummus and stuffed vine leaves are sure to leave you satisfied with no real cooking required.

Ingredients: · 1 butterhead lettuce, washed · 1 red onion, sliced · 6 cherry tomatoes, halved · 1 orange pepper, diced · a bunch of grapes · 1 tin of prepared stuffed vine leaves · 200g/7oz cooked couscous · 4 tbsp hummus · 50g/3½ oz feta · 2 tsp oregano · 1 tbsp extra virgin olive oil
Instructions:
1. Line two bowls with the salad leaves, and arrange the remaining fruit and vegetables amongst the bowls.
2. Add the hummus, couscous, stuffed vine leaves and feta.
3. Make a hollow in the hummus and pour in the olive oil and sprinkle with oregano.
