I’ve taken inspiration from Portugal, which I visit regularly with my work as a cook on my art retreats, for this easy and delicious cinnamon and plum cake.

Cooking time: 30 minutes
Ingredients
- 4 eggs
- 2 tbsp softened butter
- 1 tbsp cinnamon
- 150g (5¼oz) plain flour
- 125g (4½oz) granulated sugar
- 1 tsp baking powder
- 2 tbsp olive oil
- 4 plums, stones removed, and chopped
1. Preheat the oven to 180C/fan 160C/gas 4. Grease a bundt cake pan with butter and dust with flour.
2. With an electric mixer, beat the eggs, softened butter and the sugar until you reach a homogeneous mixture.
3. Add the cinnamon, olive oil and plums and mix for another minute until incorporated.
4. Reduce the mixer speed to low, then add the flour and baking powder.
5. Pour the mixture into the prepared pan and bake until a toothpick inserted into the centre comes out clean, about 30 to 35 minutes.
6. Remove the cake from the oven and leave to cool for 10 minutes. Then turn out of the mould on to a plate. Once the cake is completely cool serve with tea or hot coffee.
